The easiest and most enjoyable 1200 pages I've read is "A New Kind of Science". The book is a little specialized but anyone with college math can understand it pretty well. It is a little speculative and Wolfram goes out on a limb but new ideas (if they survive) start out a little cranky (sometimes they stay cranky) but usually over time they get refined. An excellent intro to cellular Automata and Complexity.

Yes - He's a genius, though the write-ups on publication were poor.
